Orange Sauce

An orange sauce. Such as you might serve with duck, or cheese-filled-bacon-wrapped roast chicken breasts :)
If you liked you could add pineapple juice, a finely chopped chilli, and/or some chopped herbs at the end like dill, tarragon or parsley.
Serves 3-4
- 1 generous cup orange juice
- ½ cup sugar
- orange zest and orange segments
- 2 tsps cornflour in a little water
- a knob of butter
Squeeze your oranges and strain the juice into a pan .
Add the sugar and a few strips of orange zest.
Simmer gently until the volume reduces by about half.
Mix the cornflour with a little water, then add to the lemon juice and stir, heating, until the sauce thickens.
Then whisk in the knob of butter.
Cut orange segments
and add to the sauce to heat through just before serving .
