Orange Sauce

An orange sauce. Such as you might serve with duck, or cheese-filled-bacon-wrapped roast chicken breasts :)

If you liked you could add pineapple juice, a finely chopped chilli, and/or some chopped herbs at the end like dill, tarragon or parsley.

Serves 3-4

Squeeze your oranges and strain the juice into a pan or pour it out from the carton!. Add the sugar and a few strips of orange zest. Simmer gently until the volume reduces by about half.
Mix the cornflour with a little water, then add to the lemon juice and stir, heating, until the sauce thickens. Then whisk in the knob of butter.
Cut orange segments don't just separate them - you need to slice away the membrane and add to the sauce to heat through just before serving any earlier and they will disintegrate.
