Blue Cheese Steak Sauce
It's not brilliant, and it ain't gourmet, but it does the job.

Blue Cheese Steak Sauce

A serviceable blue cheese sauce. For steak and such.
- blue cheese
- sour cream
- mayonnaise
- white wine/brandy
- steak juices
- chives/parsley, chopped
- Worcestershire sauce
Boil the alcohol to reduce by about half.
Add the sour cream and mayonnaise and heat gently.
Add the meat juices and a dash of Worcestershire sauce, add half the cheese and stir until melted.
Add the rest of the cheese off the heat so it doesn't melt away completely and leaves a little texture.
Stir in the herbs.
Pour over your steak. Or such.
