Herman Bread Machine Bread

Mum came up for a visit and brought her
Herman with her for a little holiday.
So I decided to eat it.
Since I'm not really big on cake thought I'd try making bread with it, and since I'm lazy I wanted to make it in my bread machine.
I adapted a few likely-looking sourdough recipes and turned out a very nice loaf, with a good texture and density, if just a little bit too sweet.
Hermans feed on sugar, amongst other things, so they're perfectly suited for cake but not so much for bread.
Makes 1 loaf
- 180ml/150g Herman
- 200ml yoghurt
- 90ml/3 fl oz water
- 2 tablespoons sunflower oil
- 4 oz strong wholewheat bread
- 16 oz strong white flour
- ½ teaspoon salt
Put the Herman and liquid ingredients into the bread pan.
Add the flour on top and the salt in a little pocket on top of that
(now you can leave the machine on timer without the salt killing the Herman).
Cook using the French program for a 1kg loaf.
