Recipe From Duncan's Mum
When
Doctor Jenny threw us out of her poxy,
plague-ridden flat (or was that the other way around?)
Duncan and I were forced to live together.
Though not in the biblical sense obviously.
So sometime in the summer of 2004, Duncan's Mum came to visit us in our comfortable apartment in Morningside, Edinburgh for a couple of weeks.
And she brought her recipes with her.
And here they are:
From Duncan's Mum
Duncan's Mum's Circassian Chicken
main fowl
- 1.4lb roasting chicken, dry and score.
- 2x5 oz cartons yoghurt (plus one)
- 1 clove garlic
- 1 tsp ginger
- ¼-½ tsp chilli
- ½ tsp turmeric
- ½ tsp mixed spice
- 2 Tblsps chopped fresh mint
- 1 Tblsp ground cumin seeds
- 1 tsp salt
- 2 tsp sugar
Mix the ingredients and cover and marinate the chicken for more than 8 hours.
Line a casserole (or ) with foil,
put chicken in and pour over marinade, and cover (or put on lid).
Place in cold oven. Heat oven to 425°F and roast 1½ hours without opening oven.
Serve the marinade separately adding an extra 1x5oz carton of yoghurt (if you can be bothered).

Duncan's Mum's Corn Pudding

- 1 egg
- ¼ cup evaporated milk
- pinch garlic salt
- ¼ cup flour
- 1 can cream-style corn
- 2 tablespoons melted margarine
Mix first ingredients, then add the corn and melted marge .
Bake in a buttered casserole dish, 325°F for 1 hour.
