Take my advice - don't buy the lassi sold at those ramshackle stands by the side of the roads in India.
They probably make them using the gutter water.

Mango Lassi

If you're lucky enough to find those glorious early summer Pakistani honey mangoes when they're in season in Bradford
(That's where they grow right? They certainly seem to sell like hot jalebis there)
then you won't need any sugar. They're already like spongiform nectar.
Serves 2
- 1 cup yoghurt
- ½ cup milk
- ¼ cup single cream
- 1 cup chopped mango
- 4 teaspoons caster sugar
- ground cardamom seeds
Blend up the mango, gradually adding the other liquid ingredients.
Add sugar to taste, and serve over ice with a sprinkling of ground cardamom seeds if desired.
